weight loss over 50 WW Carrot Cake with Cream Cheese Frosting, so good! 5 Freestyle points

Calories 233, 6 grams fat , 1 gram sat. fat, 39 carb, 1 gram fiber, 5 grams Protien, 77 mg Calcium

You will need:
3 1/2 cups all-purpose flour
1 Tablespoon Pumpkin pie spice
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1 cup plain fat-free yogurt
1 cup unsweetened applesauce
1 cup packed light brown sugar
1/2 cup canola oil (I used olive oil)
2 Tablespoons grated orange zest
1 Tablespoon vanilla extract
3 medium carrots, shredded (about 2 cups)
1 cup golden raisins (I use dried cranberries, the 50 % less sugar ones would be good if you can find them and only 1/2 cup instead of 1 cup)
For the frosting:
1 (8-oz. ) package fat-free cream cheese
3 oz. light cream cheese
1 1/2 cups confectioners' sugar

Preheat oven to 375 degrees F. Spray 2 (9 inch) round cake pans with nonstick spray and dust with flour. (I used 8 inch pans)

Combine the flour, pumpkin pie spice, baking powder, baking soda, and salt in a medium bowl. With an electric mixer on high speed, beat the eggs, yogurt, applesauce, brown sugar, oil, 1 Tablespoon of the orange zest, and the vanilla in a large bowl until blended. With the mixer on low speed, gradually add the flour mixture just until blended, 2-3 minutes. Stir in the carrots and raisins. Spread the batter evenly in the pans. Bake until a toothpick inserted in the center of each cake layer comes out clean, 30-35 minutes. Let cool in the pans on racks, 10 minutes.
Remove from pans and cool completely on the racks.
To make the frosting, with an electric mixer on high speed, beat the fat-fee and light cream cheeses, the confectioner's sugar, and the remaining 1 Tablespoon orange zest in a medium bowl until light and fluffy. Place 1 cake layer on a serving plate. Spread the top with about 1/2 cup of the frosting, then cover with the remaining cake layer. Frost the top and sides of the cake with the remaining frosting.

***Food Note: Carrot cake can easily become a zucchini cake by substituting 2 cups shredded zucchini for the carrots.
